This recipe is dead simple and always a hit. It’s gluten-free, dairy-free, and packed with protein, so it’s perfect for anyone who needs extra protein, including kids and older adults. Tools: Blender or high-speed mixer Ceramic or glass bowl for melting the chocolate in the microwave Spatula for scraping the chocolate into the blender Bowl or serving dish with cover for refrigerating the pudding Ingredients: 1 container of silken tofu 1 cup of plain soy milk (I use Trader Joe’s plain soy milk) 2 tbsp real maple syrup 1 tbsp real vanilla extract ½ tsp almond extract 1 cup of semi-sweet chocolate chunks or chips (I use the “Enjoy Life” brand) Steps: Put everything except the chocolate (the tofu, soy milk, maple syrup, vanilla, and almond extract) into the blender and blend well for about 2 minutes. Everybody I serve this to asks me for this recipe. The astrophysicist Priscilla Frisch recently requested the recipe and then named it “Alice’s Sauce,” and I’m thinking that is enough of an honor to post it. The recipe as shown calls for chopping everything by hand. You can cheat and throw it all in a food processor and just blend it all up. It’s better chopped by hand – you get the flavors coming through more intensely, I think – but in a pinch, I’ve done this with a machine. It comes out greener and smoother. Ingredients: 1/2 cup well-chopped fresh basil leaves 1/2 cup well-chopped fresh mint leaves juice of 2 limes (less if very juicy limes) 1 shallot section, minced finely (about 2 tablespoons) 2 big garlic cloves, minced finely (about 1.5 tablespoons) 3/4 cup of Sir Kensington “classic” mayonnaise (more if you want the sauce to be thicker) 1.5 tablespoons good olive oil pinch of sal - Birdseed Bread

The list of things I can’t eat has become quite tiresome: gluten, dairy, tapioca (cassava), gums, faux sugars, and foods containing a lot of fat. Knowing my stupid diet, my good friend Ellen Weissbrod sent me a version of this bread recipe. It was entitled “Life-Changing Bread.” I snorted at the title. Now, I’m a convert. It’s satisfying to the mouth like real bread. It’s so easy to make. It freezes well. I can toast slices and take them with me on trips for several days. And it’s delicious! Warning: This bread is very high in protein…but also in fiber. The ingredient used to bind the seeds and nuts into a bread, psyllium husk powder, is also the main ingredient in Metamucil. So, you don’t want to eat too much of this in one sitting, or you’ll be sitting somewhere else for a long time. That said, the fiber in this bread is great for your gut. Gluten-free, dairy-free masa cornbread Ever since I got my mother a stand-up freezer for her garage and filled it with home-cooked, salt-free stews and the like, she’s been hooked on my turkey-bean chili, chowing it down herself but also serving it to her guests. On my most recent visit , my sister invited over a number of family friends that included one person who, like me, who can’t eat gluten or dairy. So, I decided since there were two of us in that position, I would finally attempt a gluten-free, dairy-free cornbread, to go with the chili my mom wanted me to serve to the crowd. I was particularly motivated because the other woman had just found out about her intolerances, and I wanted to signal to her that she needn’t get too depressed, because great eating can still happen even with these restrictions. This is a sauce I often make for summer grilling. It goes particularly well with grilled eggplant, mushrooms, bell peppers, zucchini, and chicken. Ingredients: cashew butter (about a cup; peanut butter can be substituted but is not as tasty) lite coconut milk (1 small can) finely-chopped yellow or white onion (about 1 cup) fresh ground ginger (about 1.5 tablespoons) ground cumin (about 2 teaspoons) ground cardamom (about 1 teaspoon) ground corriander (about 1 teaspoon) fresh lemon juice (from 1-2 lemons) How to make: As the quantities above suggest, this is really a “to taste” dish, so you should vary the ratios depending on how you like it. Making it is simple: Put everything except the lemon juice in a saucepan and heat it up on low until it is all well mixed. (It doesn’t need to cook.)
